Tarrytown House Estate and Conference Center - Tarrytown Press Releases

Tarrytown House Estate on the Hudson, a Destination Hotel, Debuts New Spring and Summer Menu by Executive Chef John Peper for Their Westchester, NY Restaurant and Tavern.

Tarrytown, NY (May 11, 2015) - Tarrytown House Estate on the Hudson, A Destination Hotel, has introduced a new spring and summer menu by Executive Chef John Peper for Cellar 49, the Westchester, New York hotel’s cozy restaurant and tavern located in the cellar of the historic Biddle Mansion. Popular with both guests and Hudson Valley locals alike, Cellar 49 offers crowd-pleasing American fare with a modern twist. The new menu, conceptualized by Chef Peper and Cellar 49’s Executive Sous Chef Christopher Hettinger, celebrates the best of the spring and summer seasons along with the abundance of Hudson Valley produce and fine wineries as well as beef, meat and poultry.   “Since joining us last year as Executive Chef, John has been a tremendous asset in the restaurant’s continuing success,” said Joseph Santore, General Manager of Tarrytown House Estate. “We’ve been very pleased to have him on board and we look forward to inviting everyone to experience John’s influence on these new seasonal dishes.” Chef Peper’s approach to creating this new menu for the Westchester, New York’s fine dining restaurant combines his refined technique and creative approach with local inspiration. The new menu features flavorful, seasonal items sourced from neighboring vendors and farms such as Lenz Winery, Greentree Packing and Oscar’s Adirondack Smokehouse. To start the meal, Snack and Small Plate highlights include Popcorn with Truffle Salt; Almonds Dusted with Rosemary and Chili; Burrata with First Press Olive Oil and Lemon Sea Salt; and Littleneck Clams Grilled in Bacon Butter. Large Plate standouts are Cioppino with Clams, Mussels, Shrimp, Cod, Fennel and Tomato; Scallops Served with Bacon, Potato and Corn Puree; and Smoked Pork Chop Served with Grits, Chard and Peach Preserves. And for those seeking a smaller portion, Light Plate options include Vegetables & Grits with Eggplant, Tomato, Squash and Herbs; Gemelli with Asparagus, Roasted Tomato, Mushrooms and Basil Pesto; and Duck Tacos made with BBQ, Slaw, Avocado, and Chipotle Cream. Chef Peper’s background has brought a wealth of culinary expertise to the property. Born into the world of hospitality, Peper grew up helping with dishes and food preparation at his father’s restaurant upstate. Inspired by his upbringing, Peper began studying culinary arts in high school and then at the Culinary Institute of America. Before joining the team at Tarrytown House Estate, Peper honed his skills in New York City working under notable chefs such as Mario Batali and Michael White, eventually assuming the role as Executive Chef for New York Cruise Lines, serving fine dining cuisine in the city’s harbor. Prior to this, Peper worked in Florida at Marco Island Marriott Resort where he made his way from Group Leader to Specialty Restaurant Chef of the resort’s flagship dining restaurant. “I’m excited for guests and neighbors to try the new menu the team and I created,” said Chef Peper. “Over the course of the past year, we have really elevated the cuisine, implementing new techniques and pulling inspiration from the Hudson Valley region where we are blessed with great produce from the surrounding farms.” For more information, please call 1-800-553-8118 or visit www.tarrytownhouseestate.com. Schwartz realized that corporate America needed a new type of lodging facility designed exclusively for business meetings and with that, he set about the task of creating the nation’s first executive conference center.  Schwartz passed away in 2013, but his mantra from 1964 remains as relevant today as it was 50 years ago, “We wish all who come here, leave with a better and fuller sense of themselves and of their organization.”   To speak with a sales manager regarding Snowsurance, please call (914) 591-3105 or email jasselta@destinationhotels.com.  For more information about Tarrytown House Estate & Conference Center, visit www.tarrytownhouseestate.com.  Read More
